Easy Summer Spaghetti
Well, if your like me - hot summer nights don't stop those carb cravings. And nothing hits the spot like a plate of hot spaghetti. My newest talent is finding ways to sneak veggies into meals even the fussiest toddler would gobble up. Here is a perfect way to sneak zucchini - great for Vitamin A and Potassium- into this classic dish.
From The Gracious Pantry
Ingredients
1 Lb whole grain spaghetti noodles
1 Jar of clean marinara sauce, Wild Harvest Organic Pasta Sauce is great
1 Lb Spicy Chicken Sausage (casings removed)
4 Baby Zucchini, grated
1 Tablespoon garlic powder
1 Tablespoon onion powder
1 Tablespoon olive oil
Directions
Boil pasta according to package instructions.
While you are cooking the pasta, put olive oil, zucchini, garlic powder, onion powder, and sausage into large skillet. Brown until meat is done on a low heat.
Drain and rinse pasta and place into the skillet along with the sauce. Saute until well mixed and serve hot.
Seriously, does it get any easier than that? This is perfect for a healthy meal that can be ready in 30 minutes or less. ENJOY! Now let's see if anyone can guess my next blog post......................
