Old-Fashioned Soft Pumpkin Cookies
October is upon us. The month in which the pumpkin is its mascot. People wake up on October 1st and crave pumpkin spice latte's, pumpkin bread, roasted pumpkin seeds, pumpkin EVERYTHING. Well, last year I dug through Pinterest's best searching for a pumpkin cookie. And I found THE pumpkin cookie.
I made these last year (two or three times) and I have waited 12 loooooooooooong months to make them again. Enjoy!
Ingredients
2 1/2 Cups of Flour
1 Teaspoon Baking Soda
1 Teaspoon Baking Powder
1 Teaspoon Ground Cinnamon
1/2 Teaspoon Ground Nutmeg
1/2 Teaspoon Salt
1 1/2 Cups Granulated Sugar
1 Stick of Butter (1/2 Cup), softened
1 Large Egg
1 Cup of Pure Pumpkin Puree
1 Teaspoon Vanilla Extract
Glaze, Recipe Below
1. Preheat Oven to 350 degrees F
2. Combine Flour, Baking Soda, Baking Powder, Cinnamon, Nutmeg and Salt in a bowl and mix together.
3. Beat together sugar and butter until well mixed. Beat in Pumpkin, egg, and vanilla until smooth.
4. Gradually add in flour mixture. Drop by tablespoon onto prepared baking sheet.
5. Bake for 15-18 minutes or until edges are firm.
6. Let cool for 2 minutes on baking sheet, transfer to wire wrack or parchment paper to cool.
7. Add Glaze

2 Cups Sifted Powdered Sugar
3 Tablespoons Milk
1 Tablespoon Melted Butter
1 Teaspoon Vanilla Extract
Mix together in a bowl until smooth. You can either drizzle as is - or I added a few drops of red and yellow food coloring to make it orange and frosted them. I topped them off with some festive sprinkles.
