Sweet Potato Fries

When I purchased my "Sweet Potatoes" they were actually under a sign that read "Yams". I have always been curious as to which was which and why sweet potatoes were orange in color for other people but whenever I purchased what was under the "Sweet Potato" sign at the store or co-op I got a yellow looking potato. To clear it up, I did a little research and found some great resources here with nutritional facts. If you could care less what you are eating because lets face it, they are both delicious and a great alternative to the regular russet potato - go ahead and skip the literature linked below.



Ingredients

1 Sweet Potato per person 
Generous sprinkle of Cornstarch 
1 Tablespoon Olive Oil/ per potato 
1/2 Teaspoon Paprika/ per potato
1/4 Teaspoon Cayenne Pepper/ per potato





1.Preheat Oven to 450 Degrees F

2.Peel sweet potato, or yam. 

3.Cut in half, crosswise. I used a crinkle cut utensil for all cutting to achieve a fancy look :)

4.Cut into 1/4 inch sections lengthwise 

5.Cut into batons from there.  

6. Place cut batons into a bowl of water and let sit while oven is preheating for a couple of minutes. Drain water.

7. Sprinkle a little bit of cornstarch into a ziplock bag, fill with cut sweet potatoes, and toss to mix evenly.

8. Add olive oil and seasoning to bag, give it a good toss to make sure that the batons are covered evenly.

9. Put in the oven for 15 minutes. Flip the fries over so that they are able to crisp up evenly. Put the fries back in for another 10-15 minutes. Watch fries in the last 5 minutes for burning. Don't be afraid to let the ends brown up really good, because unlike normal french fries it takes on a caramelized effect rather than a burnt edge. Black, however = no bueno. Enjoy!!
